Wondering why savvy restaurant world stars like Danny
Meyer and Commander's Palace Ti Martin dropped out of the running to
take over Tavern on the Green? Now that we know who won the iconic and
high-grossing New York City restaurant—Dean Poll, who runs the
decidedly less-iconic Boathouse on the other side of Central Park—and
what was involved in the negotiations, we can see why they did. And
speaking of negotiations, it turns out Poll will have to endure many,
many more of them before he gets to sign the lease he has nominally
"won."

It's too bad restaurant operators are shut out of the
country club market. Wealthy golfers drop a bundle of money on meals
when they play, particularly lunch. So it's no wonder the clubs keep
this profit center to themselves. But now the top golf instructor in the
country is opening a restaurant that shows chefs and restaurateurs a way
they might get in on the action. Its name: Fitness Fare Café.

The name—Wine Doggy Bag—although descriptive, still
sounds a little cheesy for upscale restaurant use. But never mind. The
product does exactly what it's supposed to do: enable restaurant patrons
to take home the unused portion of their wine. And it lets them do so
legally, although they have to lug it around in a sealed transparent bag
that resembles something a transplant organ courier might use. But when
savvy restaurateurs who've tried products like this one say that wine
sales take off as a result, it might be worth a look.
